Smoked Whole Chicken

Ingredients

  • 5.5 lb? whole roasting chicken
  • McCormick® Grill Mates® Roasted Garlic & Herb Seasoning
  • white vinegar
  • olive oil
  • Hickory and Apple wood

Procedure

  1. Pre-heat smoker to 225-250F
  2. Mix vinegar, olive oil, and seasoning
  3. Spatchcock chicken
  4. Salt
  5. Tuck in legs and wings
  6. Apply marinade
  7. Smoke for 3 hrs at 225-250F (internal ~130)
  8. Increase temperature to 400F until interval temp of 165F
