Ingredients
- 5.5 lb? whole roasting chicken
- McCormick® Grill Mates® Roasted Garlic & Herb Seasoning
- white vinegar
- olive oil
- Hickory and Apple wood
Procedure
- Pre-heat smoker to 225-250F
- Mix vinegar, olive oil, and seasoning
- Spatchcock chicken
- Salt
- Tuck in legs and wings
- Apply marinade
- Smoke for 3 hrs at 225-250F (internal ~130)
- Increase temperature to 400F until interval temp of 165F
